Heirloom Tomato Tart

To start off, here’s a scrumptious recipe for an Heirloom Tomato Tart you can whip up quickly in the kitchen. 🍅

Ingredients 

  • Heirloom Tomatoes (2-3, medium)
  • Plums(1-2)
  • Shallot (1, large)
  • Chill pepper (1, small)
  • Thyme, (1 stalk)
  • Puff pastry sheet (1)
  • Pesto (1/4 cup)
  • Goat Cheese (4 oz.)
  • Italian seasoning (1 tbsp.)
  • Olive oil (1/2 cup)
  • Red wine vinegar (1/2 cup)

Instructions

To a bowl, add thinly sliced shallots & chili pepper, olive oil, red wine vinegar, Italian seasoning, thyme and mix well.

Slice heirloom tomatoes, add to bowl and toss in with other ingredients. Set aside to marinate.

Flour and roll out puff pastry sheet. Mark out an edge (crust) along the perimeter of the pastry sheet. Using a fork, make tiny holes on the inside perimeter of the pastry sheet.

Bake pastry on 425 degrees for 10 mins or till slightly golden brown. Spread goat cheese to inside perimeter of pastry. Add pesto to pastry and spread it over the crust of the pastry.

Add tomatoes and dressing to puff pastry and bake for another 10 mins. Remove from oven and add sliced plums and any other desired toppings. Enjoy!
